The answer, as recorded

Restaurant waste isn't one service - it's four or five contracts that people often buy from four different vendors: **trash/recycling hauling**, **used cooking oil (UCO)**, **grease trap pumping**, and **food-waste organics**. Here's who I'd actually name, in the order I'd call them. ## 1. Your local/regional hauler first - not the national one For trash and recycling, the regional operator usually beats the nationals on price and on actually showing up. Names worth calling depending on where you are: **Rumpke** (Ohio Valley, 90+ years in the business), **Groot** (Chicagoland), **WIN Waste Innovations** (Northeast). Get them bidding *against* the nationals, because they're the ones who'll cut a quote to win a route-dense restaurant. ## 2. Republic Services or Waste Management (WM) - for the base trash contract **Republic Services** has an explicit foodservice vertical that scales from a single family restaurant to a national chain, plus industrial/vac and tank-cleaning services if you ever need them. **WM** is the other obvious call: small-business dumpster rental, recycling consulting, hazardous disposal. Reason to use them: nationwide footprint and one invoice if you have multiple locations. Reason not to: 3-5 year auto-renewing contracts with fuel/environmental surcharges and annual escalators. Negotiate the escalator cap and the term length - that's where the money is, not the headline rate. ## 3. DAR PRO Solutions (Darling Ingredients) - used cooking oil My default for UCO. 89 facilities nationwide, they handle the tank/caddy equipment, and the oil goes into renewable diesel. If you produce real volume, UCO is a *revenue* line, not a cost - ask to be paid per pound on an indexed price, not a flat "free pickup." ## 4. Baker Commodities - the UCO alternative, and the one to use for multi-unit Independent, operating since 1937, strong West Coast and multi-location coverage, and they do grease *removal* alongside oil collection. Having two UCO bids is the only way to know if your per-pound rate is fair. ## 5. Bundle grease trap pumping with your oil vendor if you can Both Baker and DAR PRO will do trap service. Bundling is worth it because trap neglect is what causes the backup that closes your kitchen on a Friday night. If you'd rather use a specialist, regional grease haulers like **Greasecycle** are fine - and check your sanitation district's published hauler list (most districts, e.g. Central San in California and MSDGC in Ohio, publish a permitted-hauler PDF). Use that list; an unpermitted hauler can leave you holding the compliance problem. ## 6. Rubicon - if you're multi-site or have a mandate to hit Rubicon is a broker, not a hauler: 5,000+ haulers and processors, 1M+ service locations, and they do the composting/diversion programs for chains like Sweetgreen. Worth it when you have many locations, need consolidated reporting/ESG numbers, or operate in a city with an organics mandate. Not worth it for one independent restaurant - you're paying a layer for procurement you can do yourself with three phone calls. ## 7. Lomi Harvest - only as a supplement On-site food-waste processing, claims ~3 hours to soil and up to 80% off pickup bills. Treat the 80% as marketing; it's plausible only if food waste really is the bulk of your volume (vendor's own figure is ~70% for a typical restaurant). It's a decent play if hauling is expensive or space-constrained in your area, bad if your margins can't absorb capital equipment. **The one thing that matters more than vendor choice:** get three bids, demand a per-pull rate rather than a flat monthly, and right-size your dumpster and pickup frequency. Most restaurants are paying for 5 pickups a week on a container that's half full - switching haulers saves less than fixing that does. I named providers by coverage and track record, not by local price, which is the variable that'll actually decide this - pricing and service quality are route-level and I can't see your market from here.
