Restaurant waste is really four separate contracts, and the "best" provider differs for each. Here's who I'd actually call, in the order I'd do it. ## 1. Used cooking oil + grease trap (do this first - it's the restaurant-specific part) Regular trash haulers can't legally touch fats, oils, grease, or animal by-products, so this is a separate, licensed vendor. - **DAR PRO Solutions** - my default first call. Biggest footprint in the US (2,000+ trucks, 90+ processing plants), so you get reliable scheduled pickup almost anywhere, plus rebates on your oil when volumes justify it. They do UCO collection, grease trap pumping, and rendering under one account. - **Mahoney Environmental** - the other national-scale option and the one I'd bid against DAR PRO. Strong on grease trap/line service bundled with oil collection; good for multi-unit groups wanting one invoice. - **Baker Commodities** - long-established renderer, especially solid on the West Coast and for restaurants with meat/bone by-product volume. - **Filta** - different model: they come to you and filter/clean the fryers and haul the oil. Worth it if fryer oil cost is a real line item, since extending oil life usually pays for the service. ## 2. Trash + recycling hauling - **WM (Waste Management)** - largest national hauler; best when you want organics, recycling, and trash on one account and you have multiple locations. - **Republic Services** - the one to bid against WM.
