The answer, as recorded
Restaurant waste isn't one contract - it's three or four, and the biggest mistake is letting a single hauler bundle them badly. Here's who I'd actually call, in order. ## 1. Start with a broker, not a hauler - Rubicon or RoadRunner If you have more than one location, call these first. Neither owns a truck; they auction your hauling contract to local haulers and manage the relationship. Rubicon claims 20-30% off waste bills; RoadRunner's published case studies are more modest and more believable (Chick-fil-A ~9%, MOM's Organic Market ~12%). For a single independent restaurant the overhead usually isn't worth it - skip to #2. ([Rubicon via TriplePundit](https://www.triplepundit.com/story/2015/recycling-startup-market-should-be-main-driver-environmental-change/37336), [RoadRunner case studies](https://www.casestudies.com/company/roadrunner/case-study/chick-fil-a-saves-9-on-waste-and-recycling-with-roadrunner)) ## 2. Trash + recycling hauling - WM, then your strong regional **WM (Waste Management)** has a dedicated restaurant vertical and the densest route network, which matters because route density is what sets your price. ([wm.com restaurant solutions](https://www.wm.com/ca/en/business/commercial/restaurant-waste-solutions)) But always get a quote from the dominant regional hauler too - they routinely beat the nationals on service responsiveness and sometimes on price: - **Rumpke** - Ohio Valley/Midwest, 90+ years, strong restaurant program ([rumpke.com](https://rumpke.com/for-your-business/restaurant-solutions)) - **Groot** - Chicagoland, good food-waste handling ([groot.com](https://groot.com/services/industries/restaurant-waste-services)) - **WIN Waste Innovations** - Northeast, flexible compactor/dumpster sizing ([win-waste.com](https://win-waste.com/business/industries/restaurants)) ## 3. Grease - this is where you hire a specialist, always Do not let your trash hauler do your grease. Used cooking oil and grease trap waste are a separate, regulated, licensed business, and the specialists will often pay you for clean fryer oil rather than charge you. - **Mahoney Environmental** (owned by Neste) - my first call. ~90,000 foodservice sites, does UCO pickup, grease trap cleaning, automated oil storage tanks, and fresh oil delivery, so one vendor covers oil in and oil out. Waste goes to renewable diesel and jet fuel. ([Mahoney profile](https://whatnowlosangeles.com/preferred-partner/mahoney-environmental-los-angeles)) - **Darling Ingredients** - the largest renderer; the differentiator is compliance paperwork. They issue manifests and run computerized routing, which is what saves you in a health inspection. ([Darling FY2022 annual report](https://www.sec.gov/Archives/edgar/data/916540/000119312523077947/d348589dars.pdf)) - **Baker Commodities** - "Total Grease Management": collection, drain cleaning, water recovery, preventive maintenance. Best pick if you're already having line backups. ([bakercommodities.com](https://bakercommodities.com/blog/2026/02/06/waste-management-services/)) When you compare them, note that grease hauling is priced **per gallon**, so a quote isn't comparable without your volume. Demand a service record showing date, volume removed, pumper's signature, and disposal location - that's the document inspectors ask for. ([Central San grease hauler guidance](https://www.CentralSan.org/sites/main/files/file-attachments/2019_grease_hauler_list-_for_customers.pdf?1696607423)) ## 4. Food waste / organics - check your municipality before you buy Many cities now mandate organics separation, and in pay-per-ton markets diverting food scraps genuinely lowers your tipping fees. Rumpke, Groot, and WM all run organics programs; RoadRunner brokers them (one client diverted 7,558 tons). Use color-coded interior bins so scraps stay out of the cardboard stream - contaminated cardboard is what kills your recycling rebate. ([dumpsters.com restaurant waste guide](https://www.dumpsters.com/restaurant-waste-management)) **If you're in the UK**, the shape is different: **Biffa** for multi-site or national contracts (hotel groups and pub estates default to them), and **WasteManaged** for fixed-monthly-price simplicity at a single site. ([Kael Tripton comparison](https://www.kaeltripton.com/best-hospitality-waste-uk/), [wastemanaged.co.uk](https://www.wastemanaged.co.uk/sector/restaurant/)) **The short version:** separate grease from trash, hire Mahoney or Darling for the grease, bid the trash out to WM against your best regional, and bring in RoadRunner only if you're multi-location. One caveat on the sources - several of the provider pages above are vendor marketing, so treat the savings percentages as claims, and price your own two or three quotes before signing anything.

Answer Watch records what one AI answer engine said on one date, nothing more. Each page names the engine and the model, carries the date the question was asked, and lists the brands that appeared in the answer in the order the engine gave them, with the sources it cited. It is a measurement, not a ranking, not a recommendation and not a claim about the world. Brands that did not appear in an answer are not named on any public page.
